Tom Shepherd Steps Up To The Crease With A Flavour-Fuelled Menu

Head chef and founder of Staffordshire-based Michelin star restaurant ‘Upstairs’ – Tom Shepherd – has revealed the menu he will be serving for guests in the Warwickshire Suite at Edgbaston’s 2025 major match days. From classic staples we love to those with an Asian flare, the dishes sound (and look!) exceptional – if you’re heading to this facility for a major match day this summer, you’re in for a culinary cricket experience to savour!

Tom has had an exceptional career working in the UK’s finest kitchens, so it’s safe to say our guests are in good hands. He’s also a passionate fellow cricket fan and born and bred Brummie - so a summer spent at one of the UK’s most iconic cricket grounds doesn’t sound like a bad task for Tom!

What Happens At Our Menu Tastings?

Our food tastings are where the magic really happens. It’s where the talented chefs we partner with put their vision into action and produce a range of dishes to taste and select our favourites. It’s where WE decide what dishes YOU will be enjoying on your match day experience in hospitality! From carefully crafted canapés to decadent desserts, we put the taste to the ultimate test and ensure each dish is perfect for our guests. The chefs work hard to design and curate bespoke menus to give guests a dining experience to remember, so it’s important we have these events to get it just right for you!

The lucky taste testers (aka our expert team) consist of members from our operations department (who design, implement and oversee the running’s of our events), our event managers (from marketing and sales) and our content team (who capture photos and videos of the food to show and promote the experience). We sit around a table and are served each dish, from amuse-bouches all the way through to dessert and afternoon tea, which we then select the top choices. It’s important we arrive hungry!

England v West Indies ODI

Starters
Tandoori sand carrot, cumin yoghurt, date, dukka and coriander
Cured seabass “ceviche”, edamame and wasabi, spring onion vinegarette and grape

Main Courses
Miso glazed barbecue aubergine with fine beans, roasted potatoes, pak choi, soy crème fraiche, sesame and spring onion dressing
Duck breast, duck sausage, celeriac, cherry ketchup, pak choi and five spice sauce

Desserts
Chocolate pot with raspberries and mint

Cauliflower satay, soy roasted sesame seeds, spring onion oil and pickled radish
Smoked chalk stream trout, vanilla mayonnaise, potatoes and watercress

Main Courses
Masala spiced butternut squash butternut squash, butternut bhaji, golden raisin, kale and toasted pumpkin seeds
Poached and roasted lamb rump pressed shoulder, English peas, mint, goats curd and Caesar

Desserts
Lemon posset with white chocolate
Dark chocolate mousse, Pedro Ximenez and salted milk

Tomato, basil seeds, goats curd, tomato and chilli essence, grissini
Tuna “tartar” soy mayonnaise, pickled mooli, sesame and lime dressing

Main Courses
Salt baked celeriac, salsa verde, goats curd, crispy celeriac and black garlic
Duck breast, duck sausage, celeriac, cherry ketchup, pak choi and five spice sauce

Desserts
Treacle tart with blackberry sorbet
Vanilla pannacotta with strawberry and marigold
